The BEST Chocolate-Chip Cookies EVER - Thermomix Recipe



When I say these are the BEST Chocolate-Chip Cookies EVER I truly mean it. These cookies are heavenly. And believe me when I say you can't just stop at one!


They are moist and chewy on the inside with just enough crunch on the outside for true cookie perfection.

Recipe

Ingredients:
130g Cake Flour
130g Bread Flour (aka Bakers Flour)
3/4tsp Bi-Carb Soda
3/4tsp Baking Powder
3/4tsp Salt
140g Butter
140g Brown Sugar
100g White Sugar
2 Eggs
2tsp Vanilla Extract
350g Chocolate Chips
- You can use whatever sort of chocolate you like. Today I used half milk choc-chips and half Olympic M&M's. 70% dark chocolate is preferable for a true choc-chip cookie taste, however I've used milk choc-chips, white choc-chips, M&M's, Reece's Pieces, Snickers, Mars Bars, etc. This is totally up to you and you can change it up depending on what you feel like or what you're after.

Combine the butter, sugars and vanilla into the bowl of your thermomix and mix 1 min/speed 3.5. Scrape down the sides of your bowl, add eggs and mix another 30 secs/speed 3.5

Add flours, bi-carb soda, baking powder and salt into bowl and mix using the knead function for 30secs.

Add in your chocolate and mix 20 secs/reverse/speed 1.5. Repeat until all the chocolate has been incorporated into the dough.


NOW... the most important part of this recipe, in order to make your cookies taste AMAZING is to leave the dough to rest at least 24hrs if not 36hrs. This helps everything to meld together perfectly and creates that mouthwatering soft chewy centre and crispy exterior cookie everyone loves.

My tip is to, using a spoon or a small icecream scoop, spoon the dough into balls and place them onto a baking tray lined with cling wrap, cover with more cling wrap and place them in the freezer. Once frozen you can place them all into a snap lock bag and you will have amazing cookie dough ready for whenever you want them.


When ready to bake preheat your oven to 180degrees C and bake on a lined tray for 10-12mins. Make sure you give them plenty of space to grow. You will want to keep an eye on them as it's best to get them out slightly under cooked  rather than letting them overcook and turn into very crunchy cookies (unless you like them that way that is!)

Also if you love that salty sweet taste (which I do) you can sprinkle a little salt onto the top of your dough before baking!

Finger Buns With Boston Icing - Thermomix Recipe

There is something about finger buns that reminds me of my childhood. I think it was that my Mum used to buy them on her day off work when she did the grocery shopping, so on a Wednesday after school we would come home to a delicious, fresh finger bun. And cut in half and buttered ... yum ... can you get any better.

I've been on the look out for the perfect recipe, one that actually tastes like the ones I remember. I think it was the amazing icing that was the hardest to get right. But with a lots of trail I've finally worked out a recipe that nails it!

So if you're looking for a yummy snack your kids will love ... or if you've never heard of a finger bun before .. do yourself a favour and try this recipe out.



Recipe

Ingredients:
200g Milk
3tsp Dried Yeast
30g Caster Sugar
400g Bread Flour (aka Bakers Flour)
50g Condensed Milk
1 Egg Yolk
30g Butter
A Pinch of Salt
*optional - 80g Sultanas (for fruit filled finger buns see notes at end of recipe)

Icing:
250g Icing Sugar
50g Butter
1tsp Vanilla Extract
4Tb Milk

Toppings:
Shredded or Desiccated Coconut
100s & 1000s

Combine the milk, yeast and sugar into the bowl of your thermomix and mix 2 min/37deg/speed 1.

Add flour, condensed milk, egg yolk, butter and salt into bowl and combine 10secs/speed 7.

Knead the dough using the knead function for 7 mins.

Turn your dough out into a greased bowl and leave to prove until it has doubled in size (usually around a hour).

Once it has risen knock the air out and divide the dough into either 8x90g portions or 16x45g portions depending on your desired end size.

Shape the portions into sausage shapes and place on a lined baking tray, being sure to leave enough room for them to double in size again.

Preheat your oven to 180deg C and allow your buns to prove again while the oven heats up (approx. 20-30 minutes).

Bake for 15min or until they are lightly golden and sound hollow when tapped on the base.

Allow to cook completely before icing.

For the icing place the icing sugar into the bowl of your thermomix and mix 10 secs/speed 10.

Add the butter, vanilla extract into bowl and combine 30 secs/speed 6.

Add 2Tb milk and combine 10 secs/speed 6. Repeat until desired consistency.

Transfer the icing into a bowl big enough fit your finger bun. Pour your coconut or 100s & 1000s into another same sized bowl.

Dip the top side into the icing and then straight into the topping of choice (or no topping if you're that way inclined).

These are best eaten straight away, but also freeze really well ready to pop into kids lunch boxes.



NOTES:

If you would like to make fruit filled finger buns...

Soak your sultanas in a bowl on water while you complete the first steps. While the dough is kneading (I usually go about 1min to go) drain the sultanas and add them to the thermomix bowl through the hole in the top.

The portions sizes when working with fruit filled finger buns are as follows - 8x100g or 16x50g.

Homemade Foccacia Dough Pizzas - Thermomix Recipe


I am always on the look out for new ideas to substitute the boring ham and cheese sandwiches that go into the lunchboxes each day.

These Pizza Foccacia's are amazing. They taste so good and they are super easy to make. Which is definitely a thumbs up in my book.

This recipe is so versatile that you can customise them to suit individual children and their likes. For example my eldest daughter LOVES pineapple (close to it being an obsession), where as my eldest son HATES it. I know he does because I've tried hiding it in things before (which he usually loves) and he has worked it out. So I top the foccacia with different things for each child. They freeze perfectly so are easy to pull out of the freezer when I'm making lunchboxes and they'll be ready for lunch time.

I have also made this recipe plain before (with no toppings) cut the whole thing in half, added shredded chicken and cheese and popped it back in the oven for a couple more minutes. It is delicious.

Recipe

Ingredients:
450g Bakers Flour (also known as Bread Flour)
250g Water
2tsp Dried Yeast
2Tb Oil
2tsp Sugar
1tsp Salt

Combine the water and yeast into the bowl of your thermomix and mix 10 secs/37 degrees/speed 7.

Add in everything else (flour, sugar, salt and oil) and mix 20 secs/speed 6.

Using the KNEAD function 6 mins/knead.

Place dough into a lightly greased bowl and cover with greased cling wrap. Leave to prove until doubled in size.

Line a baking square tray with baking paper and using your fingers spread the dough into the corners.

Top the dough with your desired topping, cover and leave to prove for another 20-30 mins while you preheat the over to 220 degrees C.

Cook for 20-25 mins or until golden and the dough has cooked through.

TIP: Sometimes I need to remove my foccacia from the tin and bake it on the oven tray if the bottom is still a little under cooked but the toppings have finished.

Delicious, Quick and Fluffy Pancakes - Thermomix Recipe

My eldest daughter absolutely loves breakfast time. She wakes up super hungry and the first words out of her mouth are using "when's breakfast?"

I have literally woken up before with her in my face at 6am asking for breakfast.


Pancakes are such a favourite in our house. I used to make small sized ones, but the kids were eating them faster than I could cook them, so now I make HUGE ones and we use a pizza cutter to quickly cut them up into bite sized pieces.


A tip I like to do is to make up a batch on a Sunday afternoon and store it in the fridge in one of these pancake shakers (which I found at target on clearance for $1!!!). Then on busy mornings where Weet-Bix seems like too much of a messy effort, I can quickly cook a couple of pancakes and we can be on our way.


Here's is my all time favourite pancake recipe made in my AMAZING thermomix. They make the most lovely fluffy pancakes that can be enjoyed throughout the day.


Recipe

Ingredients:
450g Self Raising Flour
3 Eggs
150g Caster Sugar
600g Milk
3tsp Baking Powder

Combine the eggs and the milk into the bowl of your thermomix and mix 10 secs/speed 7.

Add in your dry ingredients (flour, sugar and baking powder) and mix 5 secs/speed 5. You may need to scrape down the sides of your bowl and repeat this step.

Leave your batter in the bowl and allow it to site for at least 15mins and up to 1 hour. This will give the mixture time to rise which will give you those amazingly fluffy pancakes.

Once it has risen (look for the bubbles on the top) beat the batter again for 3 secs/speed 5.
